Ingredients

    fiber one cereal: 1 cup, crushed
    fat free skim milk: 1 cup
    rolled oats: 1 cup
    chopped apple: 1 small
    splenda/brown sugar: 1/2 cup
    splenda: 1/4 cup or less
    oil: 1 tbsp
    baking powder: 3 tsp
    cinnamon: 2 tsp
    pumpkin pie spice: 1 tsp
    nutmeg: 1 tsp
    vanilla: 1 tsp
    egg white substitute (eggbeaters): 1/4 cup

Directions

Makes 12 muffins. Preheat to 375 and assemble ingredients on countertop.

Crush fiber one cereal and add oats and milk. Mix to soften a bit. Dice apple, and add along with other spices, splenda, oil, baking powder, Mix to muffin consistency.

Spray muffin tin with PAM, then lightly flour to aid removal of cooked muffins.

Bake at 375 for about 25 minutes or until toothpick comes out clean.
