IntroductionIt's great to throw the cans and packages together with some spices and let the slow-cooker do the work! My husband loves this too. It's Vegetarian if you use Soy crumbles instead of chicken.
3 cans of 14.5oz tomatoes
1 can red chili beans, rinsed and drained
1 can black beans, rinsed and drained
1 can chicken
1 cup low-sodium chipotle salsa
1/2 cup raw chopped onion
1 tbsp chili powder
1 tsp ground cumin
1 tbsp olive oil
1 Avocado, chopped
Makes 8 servings
For parties I lay out shredded cheese along with the avocdo for those not watching their wastelines.
Note you may want to susbtitue the canned chicken for soy crumbles or even ground turkey. Just be sure to adjust your nutrition values accordingly!

You are right. The main recipe should not be tagged as Vegetarian. It CAN be made vegetarian simply by substituting the chicken for soy crumbles (that is the original design of the recipe). I'm sorry it was misleading. I have changed the main tag to be Poultry. Thanks for letting me know!
