Very yummy! My first time making beets and will definitely do it again. Made with mixture of baby arugula and spinach leaves. Didn't mix it all together, though, so the leftovers wouldn't get soggy. - 9/5/12

Thanks for your recipe. I make a similar recipe replacing the Gorgonzola with goat cheese, increasing the arugula to 8 cups, reducing the beets by half, using toasted pecans and tossing it in a homemade mustard vinaigrette. I loved your version too! Thanks! - 3/30/11

Delish! The beets are much easier to peel after roasting. The smell wonderful while baking, like a mix of baking potaoes and beets. - 3/12/10

  • I loved this. Mad it as a snack today as I always have the main ingredients in the hose - some of my favourite foods. Top marks for thinking to put them all together. this will become a staple in our house. - 3/13/13

This sounds good to me. Haven't made it yet, and I am lactose intolerant. I would try it with goat cheese for that reason. - 3/13/13
