Scrub beets, wrap individually in foil, place in baking dish and bake at 400 degrees for approximately 1.5 hours or until cooked. Cool and peel beets. Cut into bite sized pieces. Sprinkle with salt and pepper, balsamic and olive oil. Toast walnuts, roughly chop and sprinkle in with beets. Toss. Sprinkle crumbed cheese. Toss. Add arugula and gently toss. Serve at room temperature.
Very yummy! My first time making beets and will definitely do it again. Made with mixture of baby arugula and spinach leaves. Didn't mix it all together, though, so the leftovers wouldn't get soggy.
Thanks for your recipe. I make a similar recipe replacing the Gorgonzola with goat cheese, increasing the arugula to 8 cups, reducing the beets by half, using toasted pecans and tossing it in a homemade mustard vinaigrette. I loved your version too! Thanks!
I loved this. Mad it as a snack today as I always have the main ingredients in the hose - some of my favourite foods. Top marks for thinking to put them all together. this will become a staple in our house.
