Spinach, bacon. cheese frittata (not low fat!)

Introduction

I made this recipe based on the original ingredient list. If turkey bacon, low fat milk, vegetable oil, and 2 % shredded cheddar were used, I'm suure it'd taste just as good! I cooked this in a 12" cast iron skillet I made this recipe based on the original ingredient list. Ingredients

    8 eggs
    8 slices of bacon
    2 tbsp bacon grease from the cooked bacon
    1/2 diced large onion
    5 oz. baby spinach, torn into smaller pieces
    1/2 cup whole milk
    1 cup of shredded cheddar cheese

Directions

Original recipe called out for this to be as 4 servings, I made it 8 servings as the amount with some corn bread was enough, and it cut down on the the calories and fat, etc.
Pre heat the oven to 450
cook 8 pieces of bacon and drain and pat dry (drain fat from pan and keep tbsp for the balance of cooking)
Dice 1/2 large onion, cook on medium in leftover fat
tear baby spinach into smaller pieces
when onion is soft, turn off heat, put in spinach so it can wilt
mix egg and milk together
when spinach is wilted, put heat under pan back to medium
add eggs
cook on stove top until eggs set
when set, add shredded cheddar to the top
Put in oven for 10 - 15 min until cheese browns slightly
take out, allow to cool for 5 - 10 minutes, cut into 8 servings
