1 medium onion, diced
1 15 oz can black beans, rinsed and drained
1 15 oz can diced tomatoes
1 c frozen corn
1 14 oz can vegetarian refried beans
1 1/2 c water
3 T taco seasoning
1/2 - 1 t cayenne pepper
1/4 c fresh cilantro, chopped (optional)
6 T nondairy sour cream or plain soy yogurt (optional)
2. Cook on low for 8-9 hours. I like to turn the crock-pot to high for the last 30 minutes to allow soup to thicken.
3) if using, top with 1 T of nondairy sour cream and sprinkle with cilantro.
