Katz Brown Rice Sushi Salad

Introduction

You can add or substitute other diced vegetables as you desire, such as cucumber and carrot. Sesame oil would be a nice touch, but I am trying to eat as little fat as possible right now. Ingredients

    3/4 cup cooked brown rice
    1/2 cup diced roasted red bell pepper
    1/4 cup diced red or green cabbage
    1 stalk celery, diced
    1 tablespoon pickled ginger
    1 sheet nori, cut or torn into small pieces
    1/2 teaspoon prepared wasabi (optional)

Directions

Toss everything together in a bowl and eat!

If you are preparing the dish in advance, do not add the nori until you are ready to eat.
