Egg Drop Soup

Ingredients

    2 tsp. sesame oil
    3 scallions, chopped
    1 tsp. fresh grated ginger
    6 cups fat free chicken broth
    2 TBSP lite soy sauce
    2 TBSP Cooking Sherry
    2 eggs, beaten

Directions

Saute' the scallion and ginger in the sesame oil about 3 minutes. Add the chicken broth, soy sauce and cooking sherry. Bring to a simmer. Slowly, very slowly, pour in the beaten eggs so it looks stringy in the soup. Cook for 2 minutes and enjoy.
