Pear Butter

Ingredients

    21 pears
    1 cup splenda
    1/2 cup sugar
    2 tsp cinnoman ground
    1/2 tsp cloves ground
    1/8 tsp cardamon
    1 oz lemon juice

Directions

Peel,m core, and quarter pears (don't peel, but remove any blemishes). (We used 21 medium size pears) enough to fill a slow cooker. Add 1/2 cup water and cook on low setting with lid on for 8-10hours until pears re very soft. When done, let cool, Drain juice and strain through a very fine strainer. Set juice aside for jelly making. Process cooked pears in a food processor until very smooth. Measure 3 quarts (12 cups) pear puree into slow cooker. Add Splenda, Sugar, Cinnoman, Cloves, and cardamon, and lemon juice. If pears are still fairly hot set for 8 -10 more hours, stirring occasionally if you can, (but it is not necessary) until very thick, hot and brown in color. It should be reduced in volume by about 1/3, Ladle into hot , sterilized jars. Adjust caps. Process jars in boiling water bath for 10 minutes. Yields 11-7 oz jars 5-16 oz jars. Yields 14 tlbs per small jar
