Spinach and Chickpeas over Brown Rice

Introduction

Good as a whole meal or a side dish. Using bagged chopped onions from the freezer and pre-chopped garlic, this can be an easy meal to keep on hand. Good as a whole meal or a side dish. Using bagged chopped onions from the freezer and pre-chopped garlic, this can be an easy meal to keep on hand.
Number of Servings: 4

Ingredients

    1 cup chopped onion
    2 tsp minced garlic
    1 tbsp extra virgin olive oil
    1 package frozen chopped spinach
    1 can drained chickpeas
    1 cup crumbled feta
    2 cups cooked brown rice
    Salt and pepper to taste

Directions

1. Saute onion and garlic in olive oil until tender
2. Add spinach and cook until tender
3. Add chickpeas, cook until warm
4. Add feta cheese, optional salt and pepper to taste
5. Serve over cooked brown rice
Serves 2 as a meal, 4 as a side dish
