Turkey Taco Tamalito Pie

Introduction

This recipe was an idea that came to me after having a mexican pie at my friend Ashly's house. She used a pie crust and layered it with most of the same ingredients listed here. It was delicious!!! For some reason though I wanted a different type of crust. My love for sweet corn tomalito came into mind....and I got to work....creating the perfect crust for this easy mexican pie. Ingredients

    ***CRUST***

    6.5 oz pkg of Martha White Yellow Corn Muffin Mix

    1/4 C whole wheat flour

    1/4 C egg beaters

    3 T skim milk

    1 tsp cumin

    1 tsp. seasoned salt

    1/2 tsp ground black pepper

    1 - 4oz can of green chiles

    1 can of sweet corn, drained


    ***FILLING***

    1 - 14.5 oz. can of fat free refried beans

    20 oz. pkg of extra lean ground turkey breast

    1 pkg. taco seasoning

    1 - 8oz. jar of taco sauce

    1- 8 oz block of 2% reduced fat cheese, shredded

    1/2 C - fat free sour cream

    1 C - lettuce, shredded

    1 - 4oz. can of sliced black olives, drained

    1 small tomato, diced

    2 - scallions, diced

Directions

MAKES 8 - HEARTY SERVINGS

Preheat Oven to 400 degrees and grease a deep dish 10 inch pie plate or a 9 x 13 baking dish.

In a skillet brown ground turkey and prepare the meat with the pkg of taco seasoning acording to pkg. directions. When completed, set aside.

In a small bowl combine muffin mix, flour, egg beaters, cumin, sugar, salt, pepper, green chiles and milk. On a floured surface, knead dough 10-15 times until it is easy to handle. Dough will be soft. Roll out and form into the bottom and up the sides of the prepared pie plate orbaking dish. Sprinkle with corn and lightly press into the crust.

On top of the dough layer ingredietns in the following order:

Refried Beans

Taco Turkey Mixture

Jar of Taco Sauce

Shredded Cheese (reserving 1/4 C)

Bake for 15-20 minutes.

Top evenly with lettuce. Spoon the sour cream into a ziploc baggie. Cut a small corner off the baggie and drizzle sour cream across the top of the pie. Top the pie off with the remaining cheese, olives, tomatoes and scallions.
