chicken casserole de mexicana

Ingredients

    1 pound chicken breast cut in thin strips
    1 can cream of mushroom soup
    1 can diced tomato with green chilis (can use any type of salsa)
    4 flour tortillas rolled up tight and cut in 1/4" strips
    1 cup shredded cheddar cheese

Directions

Cook chicken in skillet sprayed with Pam until done.
Add soup & tomatos
Simmer for 5 minutes
Use a 11 X 7 X 2 baking dish sprayed with Pam
Layer 1/2 torillas on bottom
Pour chicken mixture on top
Add the other 1/2 of tortillas on top
Top with cheese and bake @ 400 for approx 15 minutes or until cheese melts and mixture is bubbly.
Makes 6 servings (approx 3 1/2 in square)
