Adobo Seco (Dry Adobo)

Introduction

When it's time for grilling or even better smoking the fatted calf it's time for Adobo Seco. This condiment should be used as a dry rub liberally. When it's time for grilling or even better smoking the fatted calf it's time for Adobo Seco. This condiment should be used as a dry rub liberally.
Number of Servings: 1

Ingredients

    6 Tbsp salt
    3 Tbsp onion powder
    3 Tbsp garlic powder
    3 Tbsp ground black pepper
    1 1/2 tsp ground oregano
    2 tsp ground smokey cumin
    1 1/2 tsp lemon zest
    1 1/2 tsp lime zest

Directions

1) Place all ingredients in a jar with a tight fitting lid.

2) Shake well and store for up to 2 months in a cool dry place.

On occassions I swap out 3 tsp Orange zest instead of the lemon and lime.

After I receive my IR$ return I have been known to add a tsp. or two of $affron.
