Ricotta Pancakes

Introduction

With my boyfriend being hypoglycemic and loving pancakes this turned out to be a yummy and low carb alternative! With my boyfriend being hypoglycemic and loving pancakes this turned out to be a yummy and low carb alternative!
Number of Servings: 18

Ingredients

    2c. Ricotta Cheese Part Skim
    8 Large Eggs
    2/3c. White Flour
    1.5tsp. Vanilla Extract
    1tsp. Ground Nutmeg
    1tbsp. Extra Virgin Olive Oil
    1tsp. Splenda

Directions

1. Mix together all ingredients in a bowl until smooth.
2. Pour 1/4c. of batter onto a lightly greased griddle.
3. Cook evenly on each side until a golden color.

You can experiment with a variety of spices. I added a little pumpkin pie spice and a dash of cinnamon.

Makes 18 pancakes.

  • Are you feeding an army? 18 pancakes is a lot.
    And do you really only eat ONE? Because 2/3 cup of flour is NOT low carb and won't help if having problem with sugars (hypoglycemia)
