15 Bean Soup

Introduction

Meatless and Many Beans Meatless and Many Beans
Number of Servings: 12

Ingredients

    20-oz. pkg. dried 15-bean
    5 14-1/2 oz. cans Low Sodium chicken broth
    2 cups chopped carrots
    1-1/2 cups chopped celery
    1 cup chopped onions
    2 Tbsp. tomato paste
    1 tsp. Italian seasoning
    1/2 tsp. pepper
    14-1/2 oz. can diced tomatoes

Directions

Soak beans in 2 quarts water overnight, drain water, combined all ingredients except tomatoes in slow cooker. Cover. Cook on low 8 to 10 hours, or until beans are tender. Stir in tomatoes. Cover. Cook on high 10 to 20 minutes, or until soup is heated through.
