IntroductionI just threw this together - quite tasty!!! I just threw this together - quite tasty!!!
1.5 cups Potatoes with skin (I used mini white potatoes, about 5-6 of them total, and quartered them)
2 cups Water
2 Tbsp Olive Oil
1/2 tsp Sea Salt
3 Garlic Cloves, chopped
3 Tbsp fresh Parsley, chopped
3 Tbsp Green Onions, chopped
1/4 tsp Ground Black Pepper
2. Drain water. Pour remaining Olive oil in pot along with the drained potatoes and all other ingredients.
3. Stir on medium-high heat for about 5 minutes.
4. Serve fresh & hot.
Makes 2 servings.
