Mexican bake, great on it's own or as a burrito filling. Mexican bake, great on it's own or as a burrito filling.
Number of Servings: 5


    1 can Black Beans
    3/4 cup uncooked brown minute rice
    1 can stewed tomato OR 3 crushed tomatos
    1.2 cup salsa
    1 tbsp ground cumin
    1/2 EACH Red, Green, and Yellow Bell Peppers
    2 boneless chicken breasts, diced
    2 tsp margarine
    1/2 cup chopped Onions


Cook onions, pepper, chicken in butter and cumin. Season to taste.
Add to caserole dish with uncooked rice, beans, tomato, and salsa.
Bake for 45 minutes.
Serve wrapped in tortilla.
