Lamb Curry

Ingredients

    1 tbsp olive oil
    12 ounces boneless leg of lamb, diced
    1 1/2 cups of chopped onions
    1 cup diced carrots
    1 cup diced celery
    1/2 cup frozen early peas
    2 cubes of House The Curry Hot
    2 tbsp Patak's Hot Curry Paste
    1 cup low sodium vegetable broth
    2 cups water

Directions

Heat up oil in medium sauce pan. Add lamb and onions - saute until onions begin to soften and lamb is browning. Add celery, carrots, broth and water. Let simmer for 30 minutes or until lamb is tender. (May add extra water). Add peas, curry pastes and stir. Let simmer for 5 - 10 minutes more. Makes 5 1-cup servings.
