Spice Cake

Introduction

How to make spice cake with a mix and a can of pumpkin! How to make spice cake with a mix and a can of pumpkin!
Number of Servings: 12

Ingredients

    1 can of pumpkin (15 oz.)
    1 box of spice cake mix

    Prepare pan and oven as directed by the spice cake mix box. Mix pumpkin and spice cake mix together. In a lightly oiled pan, spread the mixture to cover the bottom of the pan -- it may help to use a spatula because the mixture will be thick. Bake as directed on cake mix box.

    Buttercream Glaze/Frosting (optional)

    2 cups of powdered sugar
    2 tbsp of nonfat milk
    1 tbsp of Country Crock with calcium and vitamins
    1 tsp vanilla (optional)

    Mix with a whisk until blended well. The mixture should be a little stiff, but not too stiff -- should be "pourable". Pour onto hot cake for glaze. Refrigerate and spread onto cool cake for frosting.


    Makes 12 servings.

Directions

Bake as directed by cake mix box.

  • I liked the cake itself, but the directions didn't help me. The cake box directions were insufficient as far as baking time went. Also, if I was adding so much pumpkin, should I have omitted the oil called for on the boxed directions? Mine came out almost like a cross between a pie and cake. - 11/23/11

  • I do this a lot, only I add chocolate chips (naughty, I know) and I make them into cookies. I've never though of making a cake out of it! :) I'm definitely going to try. thanks! - 6/22/09
