Introduction

Ingredients

    1/3 cup onion, minced
    1 large bunch spinach chopped
    1/2 cup light coconut milk
    3 oz Wildwood high protein super firm tofu, sliced 1/4" thick and then into 1" squares
    1/2 tsp curry powder or 1/4 tsp curry paste
    drizzle of light agave nectar

Directions

Slow saute the minced onion in a little oil spray. when transclucent, add curry and chopped spinach, 1/2 the coconut milk, stir well, reduce to medium heat, cover and simmer until spinach is cooked, about 2 minutes.
Transfer to blender. Add the rest of the coconut milk, cover and blend until fairly creamy.

Return to a small sauce pan, add tofu cubes and simmer very gently for 5-8 minutes until tofu is heated through.

NOTE: If using curry powder instead of curry paste, the saag may be a little bitter. A drizzle of light agave will bring the flavor of the coconut milk forward and dispel the bitter.

This makes 4 small servings. Serve with chapatis, dal, chutney and another curry for a vegan Indian feast
