Chicken and Spicy Lentil Soup

Introduction

Excellent for Lunch or Dinner for the family, also good to be cooked ahead of time and refrigerated. *Even if you eat both halves of the chicken and consume this entire pot of soup, and all the beans that are in it...you still ate less than 800 calories and less than 7 grams of fat. Try eating this whole thing over the course of a day...it's super super filling! Excellent diet food, amazingly yummy, eating throughout the day will boost your metabolism, the high level of protein will help build and repair muscle which will boost your metabolism as well! *Do you have a hard time getting your 8 glasses of water a day? This satisfies most of that. Number of Servings: 6

Ingredients

    Chicken Breast (2 halves)
    6 cups water
    5 cloves garlic (minced)
    2 tbsp balsalmic or red wine vinegar
    .5 cup dried black beans
    1 cup dried chick peas
    1 tbsp pepper
    .25 tsp onion powder
    1 tsp salt

Directions

Place whole chicken breast, water, garlic, vinegar, black beans, chickpeas, pepper, salt, and onion powder into a large pot.
Boil all ingredients together for 30 min or until chicken is fully cooked.

Turn to low heat.

Remove cooked chicken from the liquid, and cut into 3 ounce servings. Refrigerate chicken until serving time, or chop up chicken and add to soup for a chunkier soup.

Cover pot and simmer on low heat for 3 hrs. More water can be added if neccesary.

Allow to cool, serve warm. Makes 6 servings.
