1 cup pinto beans
½ cup red pepper
½ cup onions
1 clove garlic
½ cup corn
2 chipotle peppers in adobo
½ tsp chili powder
½ tsp cumin
1 14.5 oz can diced tomatoes
¼ cheddar cheese
Saute onion and garlic until fragrant. Add chopped chipotle and red peppers.
Add remaining ingredients (except cheese) and simmer.
When pasta has finished cooking, drain and add to sauce mixture.
Serve topped with shredded cheddar.
Makes 4 1-cup servings.
