Marinated Chicken



Introduction

Ingredients

    1/2 cup Balsamic Vinegar
    1/4 cup Apple Juice (100%, unsweetened)
    1/4 tsp Black Pepper, ground
    1 Tbsp Rosemary (fresh, chopped)
    2 tsp Thyme (fresh)
    3 cloves Garlic, minced
    1 full Chicken Breast, skin & bones removed

Directions

1. Mix all ingredients (except chicken into a bowl)
2. Cut chicken into 1" cubes & let marinate in mixture for about 10 minutes (this can marinate as long as you want it to in the refrigderator)
3. Pour chicken & marinade together into a deep pan. Cook over medium heat until chicken cubes are thoroughly cooked through and marinade is mostly evaporated.

*Note - This recipe can be done on kabobs on a grill, but extend the marinade time.

This makes 2 servings.
