Sheperd's Pie Twist

This satisfied my craving for potatoes and meat. I took the idea of a Sheperd's Pie and lowered the calories, carbs, and fat. I also dramatically increased the nutrition. And added cheese and crust. It's tasty and different! The veggies are pretty well hidden and NO ONE will EVER know that the mash is not potatoes. I promise. It helps to have someone handling the mash and another person handling the veggie/meat layer. This satisfied my craving for potatoes and meat. Ingredients

CAULIFLOWER MASH
Ricotta Cheese, part skim milk, 0.33 cup
Garlic, 1 clove, whole
Kraft Parmesan Cheese, 2 tbsp
Cauliflower, 2 large heads, chopped fine
Garbanzo Beans (Chickpeas), 1 15oz can, rinsed
TURKEY & VEGGIES
Extra Lean 99% Fat Free Ground Turkey, 20 oz
Chili powder, 1/3 tsp
Cumin powder, 1 tbsp
Pepper, black, 2 dash
Pepper, red or cayenne, 0.33 tsp
Garlic, 2 cloves, chopped
Kale, 2 cup, chopped very fine
Onions, 1 medium, chopped
Green Bell Pepper, 1 large, chopped
Tomatoes, 3 medium whole, chopped
Tomato Sauce, 1 cup
LAYERS
Mozarella Shredded Cheese, Part Skim, 0.75 cup
Pillsbury Thin Pizza Crust
Egg Substitute, 2 tbsp
Directions
1. Steam the cauliflower, beans, and garlic with a dash of salt. This may need to be done in batches. I typically use a glass microwavable dish with a glass top. You want to be able to mash it with a fork.
2. Combine the steamed cauliflower, beans, and garlic, with ricotta and parmesan cheese in a food processoer and blend until smooth. Again, this may need to be done in batches. Set aside.
3. Spray a wide-based pot with nonstick spray and brown the turkey, be sure to break it into chunks. Add spices, garlic, onions, and bell peppers and cook for 3-5 minutes. Add kale, tomatoes, and sauce. Mix well, cover, and simmer for 10 minutes.
4. In a large baking dish (approx 14in x 8in) pour in the caluiflower mash and smooth it out. Sprinkle half the shredded cheese on top. Pour in the veggie/turkey mix and smooth it out. Layer the rest of the shredded cheese. Roll out the thin crust dough and place it on top, tuck extra dough into the edges of the dish. Brush on the egg substitute for a crispy crust.
5. Bake for 12 minutes at 400 degrees.
