Introduction

This dish is quick and easy to make. Perfect for vegetarians/vegans, filling yet low in calories. You can add meat to this like grilled chicken, or cut serving size in half for a side dish instead of main course This dish is quick and easy to make. Perfect for vegetarians/vegans, filling yet low in calories. You can add meat to this like grilled chicken, or cut serving size in half for a side dish instead of main course

Ingredients

    1 cup Whole Wheat Spaghetti (or whole wheat pasta of choice)
    1 cup mixed veggies: broccoli, cauliflower, and carrots
    2-3 TBSP onion
    2-3 TBSP red peppers
    1 TBSP extra virgin olive oil
    Roasted Garlic Seasoning

Directions

(prep/cooking time anywhere from approx. 20-30 minutes)

Chop and slice up all veggies and put into a pot of boiling water.
Cook pasta according to package instructions. By the time the pasta is done, the veggies should be cooked as well.

Drain the pasta and toss with the olive oil and seasoning. Plate this and add the cooked mixed vegetables on top.
