Introduction

You can sprinkle this with Chow Mein Noodles for some extra crunch, but that adds calories too. Serve over rice and a side of steamed peas for a complete meal. Number of Servings: 8

Ingredients

    3 cups chopped, cooked chicken breast
    1 cup chopped celery
    1 cup chopped onion
    1 can FF cream of chicken soup
    2 oz of sliced almonds (about 1/4 cup)
    1 small can of mushrooms
    1 tsp salt
    1/2 tsp pepper
    1 tsp curry
    3/4 cup RF sour cream or mayo
    1/2 cup FF milk
    1 sleeve of crackers (Club or Ritz)

    small can of chow mein noodles

    White rice

Directions

Mix all ingredients together well. Pour into casserole dish, crumble crackers on top. Bake uncovered for 30 minutes on 350 degrees. Serve hot chicken over steamed rice, then garnish with small amount of chow mein noodles over each serving. Makes about 8 , 3/4 cup servings.
