1.5 cups shredded zucchini
1 cup flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp allspice
1/2 cup vegetable oil
1/2 cup splenda
1/4 cup splenda brown sugar blend
2 large eggs
1 tsp vanilla
3/4 cup semi-sweet chocolate chips
Whisk or sift together flour, cocoa, baking soda, baking powder, cinnamon, and allspice; set aside.
Beat oil, sugars, eggs, and vanilla until well blended and stir in zucchini. Add flour mixture a little at a time, mixing just until combined. Stir in chocolate chips.
Bake until a toothpick inserted in center comes out clean, about 55-70 minutes. Let cool on a wire rack 10 minutes before removing from pan.
