Introduction

Ingredients

    1 Med Onion
    2 Cloves Garlic
    1 Red Bell Pepper
    1 Med Zucchini
    1 Roma Tomato
    6-8 oz Fresh Spinach
    2 Slices Turkey Bacon, cooked
    1.25 c. egg beaters
    1/2 c. Whole Wheat Flour
    1/2 t. Baking Powder
    1/2 t. Salt
    a generous pinch of cayenne
    1 c. plus 2 T. Non-fat Milk
    3/4 c. feta cheese

Directions

Sweat onions and garlic in large frying pan until soft, add red bell pepper until just cooked, followed by zucchini until tender, roma tomato breifly, followed by spinach. Cook, stirring frequently, until spinach wilts. Remove from heat.

In large bowl, mix egg beaters, flour, baking powder, salt and cayenne and add milk. Stir in chopped bacon and then the spinach mixture.

Spray a 9x13 inch baking dish well with pam and add egg mixture. Top with feta.

Bake at 400F for 25 mins or until center is set.

Cut into 8 equal portions and let cool for at least 10 mins.
