Irish Stew

Ingredients

    1/4 cup olive oil
    5 pounds stew meat cut into 1 inch cubes
    12 large cloves
    6 cans beef broth
    1 guiness beer
    2 cups red wine
    1 can of tomato paste
    3 TBS sugar
    2 TBS thyme
    3 TBS Worcestershire sauce
    4 bay leaves
    4 TBS Butter
    3 Sweet Potatoes cut in 1 inch cubes
    2 Large onions chopped
    4 cups of chopped carrots
    5 lbs of potatoes cut in 1 inch cubes

Directions

1. Heat olive oil in heavy dutch oven. Brown beef. Add onions, garlic, beef stock, beer, wine, tomato paste, sugar, thyme, worcestershire sauce bay leaves. Bring to boil, simmer for an hour.

2. In another large pot, add butter, potatoes, and carrots saute until golden brown about 20 minutes.

3. Add vegetables to beef stew simmer uncovered until vegetables are tender, about 2 hours or put in 300 degree oven and bake slowly, you also could just put in crock pot at this point.. Discard Bay Leaf.

Makes about 16 2 cup servings
