Introduction

Number of Servings: 24

Ingredients

    1 c flour
    1c whole wheat flour
    3/4 c ground flax seed
    1/2 c sugar
    1/4 c brown sugar
    2 3/4 t baking powder
    2 t cinnamon
    3/4 t salt
    1/4 t baking soda
    4 egg whites
    1 large egg
    1/2 c applesauce
    1/3 c orange juice
    1/4 c canola oil
    2 t vanilla extract
    2 c grated carrots
    1/2 c chopped pecans
    1/2 cup flaked coconut
    1/2 c dried plums chopped (or raisins)
    1 medium tart apple, peeled and grated

Directions

Makes 24 muffins.

In large bowl combine first nine ingredients. In another bowl, beat egg whites, egg, applesauce, oragne juice, oil and vanilla. Stir into dry ingredients just until moistened. Fold in carrot, pecans, coconut, raisins and apple.

Use foil liners or grease muffin cups. Fill 3/4 full. Bake at 350 for 15-18 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to cool.
