does it get better?

note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. i find that by the time i add olive oil and the spice mixture, i cannot tell the difference between the light and the regular.

Ingredients

    * 6 slices of Ezekial sprouted sesame seed bread. (or bread of your choice. i use Ezekial because it's higher protein)
    * 1 block of light firm tofu
    * 3 tablespoons Vegenaise
    * 1/2 onion, diced
    * 1 handful parsley (about 1/4 cup)
    * 1 tablespoon curry powder, or more to taste.
    salt & pepper

Directions

lightly toast the bread.

in a bowl, crumble the tofu with your hands. add the remaining ingredients.

assemble your sandwich! add tomato, spinach, pickles, whatever else you enjoy.
