Ingredients

1 tsp Sunflower Oil (only)
2 med Eggs
1.5 rashers of Smoked Bacon (40g per rasher)
Salt and Pepper
Directions
Serves one
Grill the bacon, and chop into bite size pieces.
Crack the eggs into a bowl and mix with a fork, add a splash of water and salt and pepper.
MEASURE the oil into a small omelette pan, place on a high heat and when the oil is hot swirl around the pan to cover the base. pour the eggs into the pan and stir with a fork until the eggs start to set. Sprinkle the bacon over the eggs, fold the omelette and tip onto your plate.
