Introduction

Fluffy, golden pancakes studded with juicy strawberries are the perfect addition to a spring breakfast or brunch. We like them with a side of crispy bacon. Fluffy, golden pancakes studded with juicy strawberries are the perfect addition to a spring breakfast or brunch. We like them with a side of crispy bacon.
Number of Servings: 6

Ingredients

    1/2 cup egg substitute
    2 cups lowfat buttermilk
    1/2 cup water
    2 Tbsp canola oil
    2 Tbsp brown sugar
    1 tsp salt
    1 cup whole wheat flour
    1 cup white all-purpose flour
    1 cup wheat bran
    1 tsp baking soda
    2 tsp baking powder
    cooking spray to coat griddle
    18 large strawberries
    12 Tbsp light whipped topping

Directions

In a large mixing bowl, whisk together egg substitute, buttermilk, water, oil, and brown sugar. Pour both flours and wheat bran on top of mixture (do not stir in yet) and on top of that the salt, baking soda, and baking powder. Gently whisk until mixed thoroughly.

Cook on a griddle lightly coated with cooking spray. Recipe makes 18 pancakes, 3 pancakes to a serving. Top each serving with three strawberries and 2 tablespoons of whipped topping. May be served with maple syrup if desired. (Syrup not included in nutritional counts.)

    No buttermilk? Use 1 tsp. white vinegar or lemon juice to each cup of low-fat or non-fat milk. Didn't have wheat bran so I doubled the whole wheat flour. Deleted salt for low-sodium; added chopped walnuts and served with banana slices. Yummy! - 7/24/10

    I made this recipe as waffles. They taste great. They are sweet enough that they don't need syrup or very little if you really want syrup. I had blackberries with my waffle, not in my waffle but that would be good also. Thanks for the recipe. - 1/18/10

    mmmm...these were so good! Thank you! Even the "whole grain" haters in the family liked them! I added some no sugar pancake syrup as well. The kids added some banana.I wasn't sure how much batter to use per pancake so used 1/4c and turns out that was perfect to make 18 generous size pancakes! - 2/13/10

    This should be called strawberries with bran pancakes. There are no strawberries in the pancakes! The strawberries are on the side and just screw up the search parameters. - 7/31/10

  • Used alternate ingredients for an even more healthy version: 2 Eggs, from Natural Grain-Fed Free Roaming Nesting Hens; whole organic milk; coconut oil instead of canola ; stevia instead of brown sugar; coconut flour instead of all-purpose; homemade syrup. Here's to good health!

    I didn't have egg substitute so I used 2 whole eggs, I only had whole wheat flour so I used 3 cups of that, after making a few I decided that they needed a little something so I added 1 packet of stevia sweetner, 1 tsp of vanilla & 1/4 tsp nutmeg. They turned out good but a little thick. - 7/31/10

    Made this into waffles for lunch today and I found the batter too heavy for waffles! They were only ok, next time I'll make them into pancakes. no buttermilk so used 1% milk with lemon juice instead... maybe that's why they weren't great! - 7/25/10
