Mango Veggie Soup

Ingredients

    Whole cauliflower, chopped roughly
    Whole bunch of broccoli, chopped roughly
    2 leeks
    1 tablespoon curry power (tightly packed)
    1 tablespoon mango power (tightly packed)
    1 tablespoon paprika (tightly packed)
    4 heaped tablespoons mango chutney
    2 good quality chicken or veggie stock cubes (eg Knorr)
    8 cups water (2 litres)

Directions

Add leeks, cauliflower, broccoli and water to large pot. Bring to boil and simmer on low for 1 hour. Once cooked, blend until smooth. Add all spices, chutney and stock cubes. Simmer for another 30 minutes. Ready!

Try reheating portions with a dollop of peanut butter (melted into soup), some chilli flakes, and a squirt of lemon juice. Extra calories but nice.
