BBQ baked chicken wingsSubmitted by: BOSS3291
IntroductionMy take on BBQ chicken for the winter. I prefer thighs as they stay moist , have more flavour, and are cheaper. My take on BBQ chicken for the winter. I prefer thighs as they stay moist , have more flavour, and are cheaper.
10 chicken thighs, skin and fat removed
1 small red pepper, diced
1/2 large onion, diced
2 cloves garlic, chopped, not minced
4 tbsp. bbq sauce (I like bulls eye)
1 tbsp. extra virgin olive oil
1/2 cup white wine
dash or two of hot sauce
2 tbsp. white wine
Salt and pepper skinless thighs. Brown on both sides in same pan as vegetables. Remove and blot with paper towel to remove excess oil.
Deglaze pan with 2 tbsp. white wine. Cook down until wine is almost evaporated. Remove from heat, add chicken and vegetables. Combine BBQ sauce with 1/2 cup white wine and a few dashes of hot sauce. Pour over chicken and vegetables.
Cover and bake for 30 to 45 minutes at 350 degrees or until juices run clear and chicken is tender.
I like to bake a rice pilaf at the same time, so dinner is almost done. Just add a vegetable and you are set.
