Raisin Pumpkin Bread

Introduction

Number of Servings: 24

Ingredients

    3 cups flour
    1 tsp salt
    1 tsp baking soda
    1 tsp baking powder
    1 tsp cround cinnamon
    1/2 tsp each ground ginger, nutmeg and cloves
    3 eggs
    2 cups canned pumpkin
    1 cup unsweetened apple sauce
    2/3 cup packed brown sugar
    1/3 cup granulated sugar
    3 tsp vanilla extract
    1 cup raisins
    1 cup chopped pecans, toasted

Directions

In a large bowl, combine the flour, salt, baking soda, baking powder and spices. In another bowl, combine the eggs, pumpkin, applesauce, sugars and vanilla; stir into dry ingredients just until moistened. Fold in raisins and pecans. Pour into two greased 8x4 inch loaf pans. Bake at 350 for 50-55 mins or until a toothpick inserted near the center comes out clean. Cool for 10 mins before removing from pans to wire racks. Yields 2 loaves (12 slices each).
