Quick Autumn Veggie Scramble

Introduction

I made this as a main course for one, but it would also be a great side dish! I made this as a main course for one, but it would also be a great side dish!
Number of Servings: 1

Ingredients

    1 Sweet potato
    70 grams onions
    100 grams mushrooms
    70 grams bell peppers (I actually used red, but the calculation assumes green)
    3 slices turkey bacon (I used Butterball brand) (cut into little pieces)
    2 T Sugar-free "maple syrup" (I used Cary's brand)

Directions

1. Cut sweet potato into 1-inch cubes. (I left the peel on, but it doesn't really matter). Microwave 4-5 minutes with a little bit of water in the bowl.
2. Cut all vegetables into bite-sized (or smaller) sizes.
3. Sautee everything except the syrup in a frying pan with cooking spray. Stir to avoid sticking or burning.
4. When everything looks almost cooked (ie, onions are clear, mushrooms look sauteed), add the syrup. Stir and let simmer a few more minutes, then serve!
