Ingredients

    3 c. cooked quinoa
    1 mango cubed
    1 med. red pepper cubed
    .25 c. white onion chopped
    1 can black beans rinsed
    3 tbs. Red Wine Vinegar
    2 tbs Safflower Oil
    Stevia to taste (approx. 1 tsp will do)
    Cilantro to taste

Directions

Prepare Barley according to package.
Mix all ingredients- cool and serve over lettuce or plain :)
