Introduction

I have a soft spot for chipotle, but their tacos are SO high in calories. 3 will cost you up to 900 calories and 47 grams of fat.

This recipe provides all the flavor of a chiptole taco, but with less calories and less fat!

Ingredients

    Spicy Taco Meat:
    1 large boneless skinless chicken breast, cubed
    1/2 tomato, diced
    1/2 tsp cumin
    1/2 tsp paprika
    half a limes juice
    1/2 tsp onion powder
    1/4 tsp chili powder
    1 garlic clove, minced

    Salsa:
    1/2 tomato, diced
    1/4 cup fresh cilantro
    1/2 avocado, diced
    1/2 small Jalapeņo pepper, diced super small
    1/2 limes juice
    pinch of salt
    1/4 cup diced onion

    Other:
    4 corn torillas
    1/2 cup shredded lettuce
    1/4 cup fat free mozzerela cheese


Directions

add lime juice and garlic to a skillet. Add the cubed chicken, and spices and cook until just done. Add 1/2 the diced tomato to the chicken near the end.

while the chicken cooks, mix the ingredients for the salsa!

heat up the corn tortillas, add the chicken mixture, cheese, lettuce, and salsa and ENJOY!
