Introduction

A nice chunky salsa! Try it with tortilla chips or as a salad topping! Or just by itself!

How about a little Chipolte Ranch Dressing on top!


I created this recipe for my Un-Chained Recipe Contest Quesadilla Explosion Salad.

I created this recipe for my Un-Chained Recipe Contest Quesadilla Explosion Salad.

Number of Servings: 8

Ingredients

    2 ears corn, roasted and kernels removed
    1/4 medium red onion, chopped
    1 cup black beans
    juice of 1 lime
    1 med red pepper, roasted, peeled, seeds and ribs removed and chopped
    1 jalapeno pepper, roasted, peeled, seeds and ribs removed and chopped
    1/2 tsp corse salt(optional)
    1/2 cup cilantro, chopped

Directions

roast corn, red pepper and jalapeno.
remove kernels from cob
peel, seed and de-vein red pepper and jalapeno.

if useing canned black beans, rinse well.

if making your own black beans use little salt and no fat.

combine all ingredients in a medium bowl and stir

makes 4 1/2 cup servings
