2 c. Buttermilk
1/2 c. Olive Oil
2 Large Eggs
3 c. High FIBER ALL-BRAN Cereal
2 1/2 c. White or Wheat Flour
1 1/2 c. Sugar or Splenda
2 1/2 tsp. Baking Soda
1 tsp. Salt
3 tsp. Cinnamon
1/2 c. Walnuts or Pecans, chopped fine.
Add dry ingredients to a large bowl, adding the cereal last. Mix again & add to the wet mixed ingredients stirring just until well incorporated.
Using cup- cake cups inside a muffin tin, add mixture almost to their tops. Bake 400* for 15-25 min. depending on oven.
These can be stored in air-tight containers for up to 6 wks. Or you may chose to half the recipe for smaller batches. Recommend (1) muffin for Breakfast for promotion of good digestion.
