Ingredients

Chicken or turkey (I often make homemade turkey broth with the carcass) broth. I prefer to use when I don't have a turkey carcass Campbells' fat free and low sodium chicken broth. You will need 6 cups of broth either way.
2 cups of cooked, cubed skinless turkey breast. Approx: 1.5lbs
1 can 19 oz/540 ml diced tomatoes and juice
2 large carrots chopped
2 celery stalks, chopped
1 onion chopped
1 cup wild rice uncooked
2 tbsp parsley or 2 tsp dried
0.5tsp dried thyme
1.5 cups frozen corn
**salt and pepper to taste
**You can make this creamier by omitting tomatoes and adding cream style corn but remember to adjust calories for it.
Directions
Add everything except corn to stoneware crockpot. Cook over LOW Heat 8-10 hours or HIGH Heat 4-6 hours until veggies are tender. Add corn, cover and cook on HIGH for 20 minutes. Season with salt and pepper to taste. Makes 8 generous servings.
