This easy salad feels upscale, but comes together in no time at all. The addition of chicken makes it a great entree salad - perfect for lunch or dinner. Number of Servings: 1

Ingredients

    1-1/2 cups mixed salad greens
    1/2 cup fresh baby spinach
    1/2 cup raspberries
    4 oz grilled skinless chicken breast, cubed
    1 tbsp Gorgonzola cheese crumbles
    1 tbsp almonds, slivered

    For the Dressing:
    Balsamic Vinegar, 1 tbsp
    Olive Oil, 1 tsp
    Fresh Tarragon, finely chopped, 1 tsp
    Dijon Mustard, .3 tsp
    Pepper, black, 1 dash (remove)

Directions

Place the greens and spinach on a large plate. Top with raspberries, chicken, cheese, and almonds.

Make the dressing: whisk the vinegar, olive oil, tarragon, dijon and black pepper.

Pour dressing over salad - Enjoy!
