Breakfast Frittata

Introduction

Ingredients

    1T olive oil
    1/4 package pizza style canadian bacon, sliced in half ( around 20 half-slices)
    9 large eggs
    1 zucchini
    1 red bell bepper
    1/2 red onion
    3 garlic cloves
    1/4 c water
    1lb swiss cheese

Directions

Preheat oven to 325 degrees F

In an oven-proof skillet (med sized) or metal baking dish:
Add olive oil to pan and heat
Add veggies and sautee until desired crispness
Add canadian bacon and garlic
Scramble all eggs and add water
Pour egg mixture over veggies and ensure that filling is covered.
Move pan into oven and bake for 50 minutes or until egg mixture is cooked enough to pass clean knife test.
Remove pan and top with cheese
Put pan back into oven and cook until cheese on top browns.

Slice into 8 servings and enjoy!
