Lunchbox Muffins

Ingredients

    1/4 cup ground flax seed
    1 cup whole wheat flour
    1 cup white flour
    2 tsp baking powder
    1 tsp baking soda
    2 ripe bananas, mashed (about 1 cup)
    1/4 cup honey
    3/4 cup apple juice
    2 tsp apple cider vinegar
    3/4 cup grated zucchini
    3/4 cup grated carrots

Directions

Preheat oven to 350 degrees. Line a 12-cup muffin tin with paper liners.
In medium bowl combine flours, cinnamon, baking powder and baking soda.
In large bowl combine mashed bananas, honey, apple juice and apple cider vinegar. Mix well.
Add the dry ingredients to the wet ingredients and stir to combine. Do not over-stir!
Gently fold in zucchini and carrots.
Fill muffin cups 3/4 full. Bake for 20 minutes.

These freeze well. Wrap them individually and let them thaw in your lunch bag for a great sandwich-replacement!

Makes 12 muffins.
