Ingredients

    4 pink salmon filets (5 oz) each
    1 cup crushed canned pineapple in own juice
    2 tbsp packed Splenda brown sugar blend
    1/2 tsp dried rosemary
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1/2 tsp red pepper flakes
    1 tbsp hot sauce
    1 tbsp balsamic vinegar
    1 tsp sipping whiskey, optional

Directions

Preheat oven to 400 degrees

Take each filet and pat dry. Place each one on a piece of aluminum foil large enough to pull up on all sides and forn an open pouch, then place on a baking sheet. This really helps with clean up.. Mix remaining ingredients in a small saucepan and bring to a boil over medium heat; boil until sauce has reduced and thickened, about 2-3 minutes. Divide thickened sauce evenly over each fillet. Bake in middle of the preheat oven until salmon flakes easily with a fork; about 10 minutes per inch. Remove from oven, turn oven to broil setting. Gently baste filets with sauce in foil pack. Return to oven and broil until glace caremalizes slightly, watching closely so they do not burn. Remove and serve immediately.
