Ingredients

4 skinless, boneless chicken breast halves (cut in to halves).
Juice from 1/2 medium lime or about 1/2 tbsn lime juice.
3/4 cup apple juice or cider
2 tsp corn starch
1/2 tsp chicken granules (low sodium variety is better)
1-2 tbsn olive oil
Directions
Lightly season chicken with salt and pepper. Heat medium/large skilled on medium high heat until hot, add olive oil and swirl to coat. Add chicken, turn down heat and cook on medium, turning occasionally, until cooked through and juices no longer run pink Remove to a plate and keep warm.
In the skillet, pour the apple juice and add the boullion granules over medium heat until bubbling. While that is heating, mix the corn starch wit h the lime juice until thoroughly mixed. When apple juice is boiling, add corn starch/lime juice mixture and stir/whisk until sauce thickens. Remove from heat and serve either poured over the chicken or in a small bowl to be spooned over to taste.
