Chicken Stew - 2 cups per serving

Number of Servings: 5

Ingredients

    1.5 tbsp butter
    1 tbsp olive oil
    1 medium onion, sm dice
    1-2 cloves garlic, minced
    2 medium carrots, diced
    2 ribs celery, diced
    1 medium potato, diced
    .75 cups frozen peas
    .75 cups frozen corn kernals
    3 cups roasted chicken meat, diced
    2 tbsp flour
    6 cups chicken broth, low sodium, or homemade is best
    1 bay leaf
    5-6 sprigs fresh thyme
    salt to taste

Directions

-melt the butter with olive oil over low heat.
-add the onions and sweat about 20-30 minutes until caremelized to develop flavor, add garlic & sweat
-sprinkle flour over onions and stir to form paste with oil. cook roux until light tan - 5 minutes, stiring frequently
-add potatoes, carrots and celery, bay leaf and thyme
-add chicken broth, simmer until potatoes and carrots are cooked through - about 30 minutes
-add chicken, peas and corn, simmer until flavors are combined and to desired thickness of the broth. about 30minutes to an hour

Best when cooled and reheated before serving, allowing flavors to meld

Makes 5 2-cup servings
serve with biscuits, or bread, or place as filling in a pastry crust and bake for a chicken pot pie
