Easy Crabcakes

Introduction

Mix and form your crab patties the night before, then just fry them lightly in EVOO! Mix and form your crab patties the night before, then just fry them lightly in EVOO!
Number of Servings: 6

Ingredients

    1lb crabmeat, no bones and precooked
    2 tbsp mayonnaise
    1 egg, beaten
    1 tbsp oregano or Old Bay
    1/2 cup crushed saltines
    2 tbsp extra virgin olive oil

Directions

Beat egg in a medium bowl. Add crushed saltines, oregano, mayonnaise, and crabmeat. Mix just enough to moisten all, do NOT overmix. Form into six patties and refrigerate for at least an hour. I like to refrigerate overnight so that I can fry them as soon as I get home from work.

Put 2 tbsp EVOO into a heavy pan and heat to medium. Fry each patty until golden brown, about ten minutes, flipping halfway through.
