Curried Halibut

Introduction

Almost too pretty too eat! Almost too pretty too eat!
Number of Servings: 4

Ingredients

    1 Tbsp olive oil
    1 chopped onion
    1 small chopped zucchini
    1 small chopped butternut squash
    1 red pepper
    1 orange or green pepper
    1 Tbsp curry powder
    16 oz frozen fish fillets (sole or halibut) cut into bite-sized pieces
    1 can crushed or diced tomatoes

Directions

Fry the onion in the oil for 3 minutes. Add zucchini, peppers and squash and saute for another 2-3 minutes until the vegetables start ot soften. Add curry powder and saute for another minute. Stir in fish and tomato sauce. Cover and simmer for 8-10 minutes until the fish is cooked through. Servie over rice or potatoes. Serves 4 people generously.
