1 bag (1lb 14oz) frozen shredded potatoes
2 cans Campbell's healthy request Cream of Chicken condensed soup
1 cup light sour cream
2 cups (8oz) 2% shreded sharp cheddar cheese
1 small onion, finely chopped (approx 1/4 cup)
1 tsp salt
1/2 cup melted smart balance buttery spread
2 cups broken (not crushed) corn flakes
Grease a 9x13" pan with cooking spray
In a large mixing bowl stir together the two cans of soup, light sour cream, onion , and salt.
Gently and carefully stir in the frozen shredded potatoes and cheddar cheese. Make sure to break apart any frozen clumps of potatoes.
After it's mixed well, spread it evenly into the 9x13 pan.
Melt the smart balance and then combine it with the corn flakes. Evenly pour the corn flakes mixture over the potatoes and bake for approximately 1 hour.
Divide the recipe into 12 servings by cutting the pan 3x4 to yield 12 portions. Enjoy!
